My favouite pudding! My Mum used to use lemon zest in the recipe and then mix lemon juice into the hot syrup we were allowed to pour over it, heaven :)

I know suet is traditional but if you can't get it, either proper beef suet or the vegetarian variety, or just don't want to use it, you can get away without using it, it won't be as stodgy without it yet if you want the stodginess, either swap a third of the self raising flour for plain flour or bread flour, or instead of that, add a couple of extra egg yolks and 2 tea spoons of corn flour or birds custard powder. Either way add extra butter to the mix aswell.

Golden syrup is a light treacle, and while corn syrup may have some similar properties, it won't taste the same as the real thing. If you have a British aisle in your local supermarket, I would treat myself to a tin of Lyle's Golden syrup - and some Ambrosia Devon custard - for a truly authentic experience!

Hi Jamie I tried your sponge Cale,I did everything as you indicated put it in the microwave 12 minutes later I brought it out and it was lovely to see but something must have gone wrong it was very hard. My microwave is a Nerf I cooked it at 600 .what did I do 😢😊wrong 🙏

Unfortunately, suet isn’t available in the US or I haven’t seen it in the forty years I’ve been living here. An ex pat watching in S Florida. At least I can get Birds canned custard.

They have zero sugar subs for brown sugar and golden syrup now, have a look! No need to be left out with all the new stuff around, if your also worried about carbs in the flour I’m sure there will be a recipe somewhere with almond flour or alternatives if you look up keto or low carb. Good luck!

Microwave cooking is a real cooking method. But not traditional, I agree. And…. Not everyone has the time to make everything from scratch. But maybe they want to make something nice. But… I hear what you are saying. :-) I’m not British, so I actually know nothing about how to make this pudding, but this microwave method seems doable and enjoyable.
