Like all your recipes, simple yet full of flavour. Kudos, Chef Nafisa! I tried this today, but took the liberty of making a few modifications: (1) As we are avoiding fried food, I pressure cooked the chicken (instead of shallow frying it as in the recipe) until just before the first whistle and then turned the flame off (2) Added four lightly crushed cardamoms (we love the flavour and aroma) (3) Added almonds also to the onion/cashew paste, making it an almond/cashew/onion paste. Fingers crossed, but it turned out well.

I cooked this last night and replaced the dairy items with a very thick coconut milk, similar consistency to cream cheese. I used it whole for the marinade, and watered it down to a milky consistency instead of boiling and cooling real milk, it worked just as good. We only had roasted and salted cashews, the type you usually snack on, but they were just fine too as I just left the salt out of the dish instead. Sadly I didn't have chaat masala, and used kashmiri chilli flakes instead of powder (only 1/4tsp as they're very hot), and I also used passata in place of the tomato purée. Let's just say it was utterly delicious! I don't think the flavour would've been exactly like yours due to the substitutions I made (had to get creative as I was missing half of the ingredients), but I've had dishes from restaurants that weren't as good, and I'll be trying more of your recipes. Thanks for sharing!

In the UK at least using so much tomato puree wouldn't make sense to me as it's so tart. They are probably using passata in the video. I'm running off a slightly different recipe but I have a few tips to share. I add tandoori masala when I marinate the chicken but the chaat can provide flavour through the mango it contains. I first roast cashews/almonds and put them in the blender, then caramelize the onions adding 5-6 fried tomatoes slightly thereafter, blending them all together. The fenugreek/methi I add after the onion/tomato paste is fried off; before the chicken is added instead of at the end. I use roughly 125ml yogurt and 225ml coconut milk for the gravy. A handful of chopped coriander, fresh sliced chilli and tablespoon of butter ghee toward the end is nice, with a tablespoon of sugar to balance the dish. This meal is truly delicious and if I had to experiment at some point I would make the dish with roasted red bell peppers instead of tomatoes as I feel they could be even sweeter and also change the profile of the dish in some way.

Chaat masala is basically garam masala with black pepper, so If you add black pepper you should be okay.
