we dont have buttermilk readily available in asia like you guys do in usa thats how buttermilk is made you either use vinegar or fresh lemon juice and mix it with milk thats how homemade buttermilk is made

it's less dangerous not washing it since the salmonella infected water won't splash everywhere. cooking it slightly kills all bacteria. no need to wash, heat washes all.
