Guntur Chicken is known for its fiery flavour. The dish originates from Guntur, a city in Andhra Pradesh, India, famous for its spicy cuisine, However, the level of spiciness can be adjusted according to your preference
Spicy Guntur Chicken with Whole Spices
Ingredients:
For Marination:
Chicken: 1 kg
Turmeric: 1/2 tsp
Chili powder: 1 1/2 tsp
Curd: 2 tbsp
Salt: to taste
Ginger-garlic paste: 2 tsp
For Whole Spices:
Coriander seeds: 2 tbsp
Black pepper: 1 tbsp
Green cardamom: 4
Cloves: 5-6
Cumin seeds: 1 tsp
Fennel seeds: 1 tsp
Cinnamon stick: 1/2 inch
Star anise: 1 1/2
Kashmiri chili: 8
Coconut: 2 tbsp (grated)
For Cooking:
Oil: 3 tbsp
Onion: 2 medium (sliced)
Green chili: 2-3 (slit)
Guntur chili: 6 (broken)
Curry leaves: a handful
Ginger-garlic paste: 2 tbsp
Water: 1 cup
Salt: to taste
Tomato: 2 medium size (chopped)
Coriander leaves: for garnish
Instructions:
Marinate the Chicken:
In a bowl, combine the chicken with turmeric, chili powder, curd, salt, and ginger-garlic paste. Mix well and let it marinate for at least 2-3 hours (or longer for deeper flavor).
Prepare Whole Spices:
In a dry pan, lightly toast the coriander seeds, black pepper, green cardamom, cloves, cumin seeds, fennel seeds, cinnamon stick, star anise, coconut and Kashmiri chili until fragrant. Allow them to cool and then grind to a coarse powder.
Cook the Chicken:
Heat oil in a large pot over medium heat. Add sliced onions and sauté until golden brown.
Add the slit green chilies, broken guntur chilies, and curry leaves. Sauté for a minute.
Stir in the ginger-garlic paste and cook until the raw smell disappears.
Add the marinated chicken and cook until the chicken is browned on all sides.
Add the ground spice mix and mix well.
Add chopped tomatoes and cook until they soften and incorporate into the mixture.
Pour in the water and season with salt. Bring to a simmer.
Finish Cooking:
Cover the pot and cook on low heat for about 20-25 minutes, or until the chicken is tender and cooked through.
Adjust seasoning if necessary.
Garnish and Serve:
Once done, garnish with chopped coriander leaves. Serve hot with rice, naan, or your favorite bread.
