Easy and spicy fingerling potatoes are a perfect side dish for roasts
10 fingerling potatoes
1 jalapeno pepper
1 inch piece of fresh ginger
2 cloves garlic
1 shallot
1 tsp turmeric
1 cup coconut milk
salt and pepper
Instructions
1. Hasselback fingerling potatoes and place in baking dish.
2. Clean jalapeno pepper and coarsely chop.
3. Peel and coarsely chop ginger, garlic and shallot
4. Add all ingredients to the bowl of a blender and puree
5. Taste puree and add salt and pepper as needed
6. Pour puree over all the potatoes. Make sure the liquid covers all potatoes and seeps into the slices.
7. Bake 45 minutes in a 350 oven.
