I’m not a fan of sponge cake, but I’m not going to lie it looks very good. Sponge cake was always in our household every Christmas. You can smell the goodness in the air. Honestly, I’m more of a pound cake person.

Just mixed this up. My batter looks different (everything looks separated/curdled) and I'm concerned. I'll trust the process and bake. The only thing I did different was use buttermilk like you said we could and I didn't have any limes to zest. It's currently in the oven so fingers crossed.

​@@candythaglamcookyes. Google said it's because the eggs and milk were cold so the butter didn't emulsify. The flavor is delicious even though the texture is a little off. I'll make it again though. Your recipe is awesome.

@LaniChermont ohhh yes i forgot to mention that all ingredients should be at room temperature. Makes a huge difference.

@Felfel592 i feel like if you don't add the milk it comes out more heavy like a pound cake. The milk gives it a lighter texture.
