The silicone mat isn’t a bad idea, but I would recommend dusting your counter with GF flour and rolling pin to help keep it from sticking. I’d also recommend turning your dough a 1/4 turn after a few rolls and dusting as needed. Helps keep from sticking and tearing and ensures an even thickness of the dough as you work to roll it out ( I’m a pastry chef who’s rolled more dough than I can count 🙂)

Was going to recommend that at as well! I was the pastry chef at a cafe for years, and that cinn roll dough always turned out so much more even every time. Plus it helps you get the shape you're going for better as well.

Do you have any tips to not have the dough stuck to the silicone mold? I swear I tried multiple times with already made dough (don't kill me XD) and had my skull pizza rolls stick on the lower side and fall apart 99% of the times. The pizza dough was always the same brand, I tried dusting the mold with flour, I laid the dough thicker or after I used a roller pin, I tried to not use too much mozzarella for pizza (the dry type) or to use less tomato sauce or pepperoni... only the first time I managed to release the skulls from the mold unscathed.

Hey Ghoul! These turned out awesome! One thing I might recommend for the mushrooms, and as you mentioned raw spinach, is to cook them before putting them in the pockets. Both of those not only shrink in size, but they also release a lot of moisture (water) when they cook. So putting them in the pockets raw could result in a soggy inner dough and increase the potential for leakage if they aren't sealed super tight.

Thank goodness you have this video. I have seen the skull pizza, was going to make those. But, couldn’t find the skull pan. So, I did find a tombstone pan at Home Goods and figured I would make that instead. I looked up videos of the tombstone pockets, and you are the only one I found after I bought the dang thing. And the best thing is, you have the same pan as I do. Halloween is the only holiday I like. I have kids and enjoy things for them, but Halloween is the one I look forward to. 😊
