I have to do this as part of my real estate marketing work - except often the other way around. I regularly have to remove clouds and replace the sky with a gradient blue sky and I often have to deal with catching the sky peeking through all kinds of trees - which can be tricky, especially with palm trees. Photoshop has definitely improved in its selection identification, but it's rarely a quick process that gets it done.
