Happy user from Canada. I bought it from Sportys after it came out.

My aircraft has dual Garmin ADS-B receivers with subscription to Sirius XM, and I have dual AHRS. Therefore, the ADS-b weather and traffic are picked up by my iPad and viewable on ForeFlight. Therefore, what advantages would the sentry plus give me ? I suppose a 3rd AHRS and GPS receiver as another backup independent of installed aircraft systems, if I thought that was worthwhile…

If you have a total electric system failure, this would be your only option to save your fancy shoes in hard IFR
Several other videos explain that you do not get all nearby ads-b aircraft unless you also have ads-b out that is properly tuned and adjusted - please explain.

That is correct. This article explains it well: ipadpilotnews.com/2021/11/how-does-ads-b-traffic-work/

I've been able to record flight data using my regular Sentry and Foreflight. Is the difference with Sentry Plus having the flight data saved to the unit itself and not streaming to Foreflight to record?

Two main differences. First (as you say) the Sentry Plus records automatically and stores it on the device, so you don't have to start/stop track logging in the app. You don't even have to have your iPad with you or the app open - it'll store multiple flights. Secondly, it records more data, like attitude and G-load. This gives you a richer debrief experience than just GPS position.

You can also still record in Foreflight. The nice thing is that if you forget to start recording in Foreflight, then you now have a backup tracklog that Sentry Plus stores itself. That said, I find the Sentry Plus track logs tend to get split up (similar to Foreflight's automatic record mode), and unfortunately Foreflight does not appear to have tools for combining track logs.

how do i get subscription free weather?

As long as you have an ADS-B receiver and an app to display the weather on, you're set. In this example it's Sentry Plus and ForeFlight.
