When I lived in Idaho, we would hang our deer in the garage as it is cool to cold in deer season, it depends on how long as we wrapped up the whole dressed mule deer in a cheese cloth or sheet, sprinkled black pepper on it to keep off any flies, let it age for 1week or two ,or until a little mold started to grow on the edge of the rib cage. That was damn near 40 years ago. The elk was done in quarters and the ribs and blood meat was processed into pepperoni, or jerky or hamburger and sausage. Did you know that Lewis and Clark had .30 caliber pcp air rifle ? Little trivia... Awesome job God bless you and your loved ones

In the future cover the meat with a heavy layer of kosher rock salt for twenty minutes and rinse good under water then pat dry and season, bet you'll be surprised! Tenderizing with salt is amazing

I've never heard of freezing the meat to do ageing. I've heard of hanging them in a cooler for two weeks before at around 37-40 degrees

Agreed! From what I've heard the ageing stops when you freeze it. The meat has has to be above freezing the entire time to age.

As a deer processor owner... I typically age all deer unless specified atleast 11 days but no more than 14 days. It give them the best taste. But we keep them at 34 degrees

Processors in Wyoming won't do that. They are so busy during hunting season they cut/wrap/freeze and want it out the door. IF you get an elk or deer late in the season they might. That is why I don't use them here.

I’m assuming you talking about walk in cooler Mike. I would say 10 days to 2 weeks aging meat. Temp is the main thing, got to be sub 40 degree temp in the cooler. I’ve aged meat for up to 21 days. Totally changed flavor of venison! I definitely prefer it! 👍

On beef 14 day minimum dry age is my recommendation but longer is always better

The best beef that’s dry aged is mouldy on the outside before its trimmed and cut into steaks. Has to be done properly but maybe would be good with all kinds of meat

I think 9 to 10 days at 35 tastes the best but at deer camp early winter late fall 3 to 4 days if you dont have a freezer gotta be cold temps though
