I am enjoying small-batch canning so much this spring! Today, I went out into the forest garden and picked a bunch of rhubarb, which I turned into Victorian BBQ Sauce, Stewed Rhubarb d, and Juice Concentrate. I also picked some asparagus and decided to pickle a few pints of that. I hope you enjoy coming along with me.

I'm in the UK and I make a fantastic curried rhubarb chutney which is wonderful with cheeses and cooked cold meats, it keeps for years, its a old family recipe if you would like it

Rhubarb juice is lovely, on its own with mulling spices or in a punch with citrus. Last year I made rhubarb leather with my abundance. It is now the favourite way for my family to enjoy rhubarb.

Hi Chelsea, you should this rhubarb drink. 2 stalks rhubarb raw, 2 cups chopped juice & zest of 1 lemon, 1 tsp salt. Honey to taste. 1 quart water, add more water to dilute if needed Add to blender, blend for 1-2 min. Pour through sieve. Serve chilled

We moved to a new property last year and there was no rhubarb here. I transplanted some last year and this spring too. I should have lots in a few years. We love rhubarb.

I have rhubarb that need to relocate, they are 4 years old now and just never get very large, and I think it has to do with the shadiness of where they live. Are yours in full sun, Chelsea? The canning looks like it went brilliantly, such pretty jars! :)

Everything is so beautiful! One of my favorite things to make with my rhubarb is that Sunshine Rhubarb juice. Last time I used a blood orange for part of the citrus and the color of the juice was incredible!

You mentioned a 6 burner stove, I have a large family, (11 children, 8 grand children). And I just got my big stove, got a propane forno from home Depot. I am also in Canada. I got the 8 burner! Highly recommend it, it changed my cooking life! Two ovens, slide out racks it's amazing! You really should go for it. It is a game changer!

We left last year’s (usually for us EXTREMELY difficult to grow from seed) dill to go to seed to collect for this year’s sowing and for using in pickle mixes. The seed we saved germinated well and we’ve been collecting huge harvests that are now dried and on the shelves. Seed that dropped on the ground have also germinated and providing an abundance we never could have hoped for. By the bye…… everything else has largely been decimated by slugs!!!! 😩🤣 We’ll take what grows and are sooooo grateful. What a year!!!

I put up probably 150 plus jars of pickles every year , we love them . I think pickled beets are my fav as o just love the colour . I have been admiring that funnel , I have a progressive one that has headspace ect on it but can always use another one .

Hi Chelsea lovely to see you in the garden which you seem to love so much .Nice for me to catch you early for me. Husband still hasn't had his op yet but every test has been done so any day now. I love pickles too much I'm the only one in family who does. It's all their faces when I start drinking the vinegar I love it. Hope you're all getting on OK certainly looks like it can't wait to see the garden when everything starts popping up. See you in your next post.

I am planning to pick some to dehydrate then grind into a powder for soap making. Makes a pretty pink soap bar the natural way.

That bbq sauce is amazing! I don’t like bbq sauce from the store at all but I tried it anyway to use up some rhubarb. So good! This time I have to freeze it but next time I’ll have my canning supplies ready. Thank you for this delicious recipe!

All looks delicious. As a child I would be given a stick of rhubarb, which had been peeled and a saucer of sugar to dip it in. It was lovely and crunchy

You can also take the rhubarb leaves and lay them flat I sheets to use as garden bed weed cover. Just keep piling them on, natural row cover!

Chelsea, another very good reason to pull rhubarb versus cutting it is that it stimulates the plant to continue to grow and send out more leaves.

Thank you for this lovely video! I love rhubarb and rarely get it these days. My mom had a big plant outside our kitchen door and made lots of it, when I was a young child. Many decades ago now~! Your canning brought beautiful results to the eye, and I am quite certain will taste delicious in all the recipes you use💚💗

Love my rhubarb. I usually leave mine for a bit, then pick, chop and freeze so I can make the stuff in the fall and winter. I need to try the BBQ sauce and the juice. Rhubarb relish is so good as well - always have to have it on hand. It all looked really good!

Nice work! Im pretty sure your rhubarb is the "Canadian Red" variety. I grow it too. It has very large stalks, vivid red color, and a sweet-tart flavor.

Rhubarb should be pulled the way you are doing it. If you cut it rhubarb won't send up as many shoots. Or at least that is what my mother told me many moons ago.

I have a bunch of 3-stalk rhubarb plants (which have been in situ for a good 5 years). It is exasperating. I keep picking the 3rd stalks. This year I'm trying not to pick any stalks and hope they'll grow into big clumps like yours. Thanks for the great ideas, Chelsea!

Compost! They are heavy feeders and need lots of compost and water when they’re getting established.

Yay!!! I’m a rhubarb novice. I’ve grown it from seeds in Oklahoma 4 years in a row, but it always fades away in the heat. Any advice for when to harvest now that I’ve got them shaded and plan to try keeping them alive… 🤪 I know you’re probably not supposed to harvest from the first year, and mine aren’t turning red. Is that because of the shade cloth maybe? Open to ideas.

Hi Chelsea, didn't you once mention that you get sore joints etc? Rhubarb triggers that. It contains oxalic acid. The older rhubarb gets, the more is in it. Oxalic acid can form oxalate crystals and cause pain, stiffness and inflammation in muscles and joints. It can also aggravate the gut lining making it difficult to recover from a 'leaky gut'

Just tie them in the colander and hang them up by the knot. 1970 Lemans - he’s collecting part but says it’s his retirement project.

Comfrey is the last plant I want all over my property. It re=seeds like crazy and is difficult to control. It takes over the entire garden. I don't even throw it on the compost pile to avoid the invasion of the plant. I know it has its benefit but the massive amount of work it creates does not justify its life in my garden.

How old is that rhubarb bush? It’s huge! Maybe you should chop the leaves, and compost in place. Oh never mind. You said 3 years, and you did compost the leaves in place.

My rhubarb never gets thicker than a pencil. And always puts of flower stalks as soon as it starts to grow.

Remove the flowerstalks as soon as possible. Than the normal growth of leaves will continue. The early flowering is provoked by unusually hot days at the beginning of springtime.
