So you open up the hatch and to reach all the potatoes you have to dig through the soil horizontally through a small opening, take it out and create a mess instead of digging vertically where the soil just falls back down on itself? GENIUS!

That door would allow you to harvest a few early, smaller potatoes on that side, while leaving others in other areas of the box to continue to grow and mature. As for harvesting all of the potatoes later, I would pull the plant out and harvest from the top down, using the door access later in the harvesting. You might want to place a tarp on the ground under the door to catch any soil dropping out of the door.

Just plant potatoes once, on the bottom , correct? Then add soil around the plants when they get 12” high and so on....
