We acknowledge the sacrifice the plants make to create the human body through their nutrition. They Do care about themselves but are unable to show emotions and therefore they can be eaten but not in excess. Animals, on the other hand, are not that far away from us with eyes, brains, legs etc --they are really close to our physical characteristics and they display emotions therefore we can' t eat them.
