It's to stabilize fish, hold it together as you turn it on grill. Notice it's not done when frying or boiling as they are normally cut up.

All fish are not equal or same. They throat is slit just below and what needs to come is taken. Same as all fish do not have scales. Catfish do not have scales but all fish are slimy, I spent plenty of time with my Dad fishing and cleaning. We stripped the skin from the catfish and he always fileted them. After working in a restaurant we served catfish as whole filets or whole fish chunked. Being Southern we used cornmeal to coat the fish in before frying, Northern use flour and fast food use a batter then you have mostly Asians fry plain.

@@mssshep I'm sorry, I didn't realize about cornmeal being used. All of my friends from Northern states have wanted to use flour only. Being a Southern country girl that spent too much time fishing and camping with my Dad and cooking for employee fish fry's I've just gotten use to how the men folks liked it done. I do so miss it but I'm happy with a sauté piece and salad. We served with slaw, hushpuppies and grits. Let me know what you served alone side.

These people have no feelings or empathy whatsoever. I periodically try and watch a video because SOME dishes are interesting, but the shear cruelty of the way they torture animals/fish/shellfish before they FINALLY die is so disturbing. They smile and enjoy the torture also. I actually use her’s and a couple others videos to prove my point in many conversations/ debates about some cultures. And sadly this is actually better than their dolphin grinds and other sadistic practices they seem to enjoy.
