I researched the sandwich and the Chinese were making St Paul's during the 1800's on the rail road chuck wagons. I grew up on the Legendary Chong Wah St Paul's in the U on Olive back in the 80's

I grew up in Minneapolis and my mom would make egg foo yung for dinner and any leftovers would be a St. Paul sandwich the next day. Funny thing was it didn’t have a name at the time. It was just an egg foo yung sandwich. You don't need all that oil!😮

That looked like egg foo yung to me, which I really like. There are so many versions of, very regional.

Our China Town might not look fancy like Chicago's, you might even drive through it without realizing you drive through it (Olive Blvd between I-170 and Hanley Rd). But every Asian restaurant on that street is legit.

Fire, I know it may not be the healthiest way to eat it but I like mine with the fake American cheese slice. Also, as a STL resident if u come to my city I recommend either John's on West Florissant or Bing Lau on Grand for fried rice & St Paul sandwiches🤷🏾♂️
