Students brewed an ancient beer during class with Stanford archaeologist Li Liu, who discovered evidence of earliest beer-making in China as part of her recent research.

Great to see a university investigating this kind of stuff! Not sure it was the alcohols that were sour, probably lactobacillus bacteria on the grain lowered the pH. The straws are actually pretty accurate too - it's how the Sumerians showed themselves drinking a similar beer on their stone tablets.

for sure: Beer in the past was not made in Laboratory Vessels, they probably used wooden barrels or something. Come on!

i doubt brewing was a terrible as that in ancient times they didnt filter after fermentation was done

That is how you are supposed to drink ancient beer. The drink was really “grainy” the straws kept you from drinking it. Some of the straws were ginormous. (Check out Ancient Egyptian beer drinking)

I would be happy if america could reasonably duplicate a good german beer (and no samual adams doesn't cut it). Or american distributors get better at distributing fresh german beer and stop stocking old beer. Capitalism isn't working in the foreign beer market.
