In this episode we head offshore on the X3 bayboat in search of Madison’s first ever swordfish. We wind up tagging and releasing 2 swordfish during the trip and catch a squid. Back at home we sauté the squid up for a lunch snack and we follow that up with a trip aboard my friends new 47’ Freeman!

A swordfish in my mind is the greatest of gamefish to land. I remember seeing a large swordfish tied to the end of a fishing boat on the freeway in south OC, CA years ago on the freeway and thinking wow what an incredible catch. One time in Dana Point harbor I saw fisherman that had landed a 400+ pound swordfish and it was so impressive. I know that some fishermen used small airplanes to help them land these fish and I loved the idea of eating a locally caught billfish like this.

Hey Nick, another squid softener/ tenderiser is kiwi fruits, 🥝,,, been doing it for years, same story clean and cut the squid to cooking sizes, add like 2 kiwi per squid and leave overnight,,,,, then cook it gently like you are there, or on a hotplate lightly oiled, love ya video and well done to young maddy

Bait was still in good enough shape, the bonito strips are on of the most durable baits. It the leader was compromised Any worse than it was I would change it. The trick to good Calimari is don't make rings. Soak in Buttermilk. Cut it and lay it flat. Pound it out like you would Abalone. The lightly bread it and fry. We call this Abalone Style.. Awsome!!

If you don't have buttermilk, a perfect substitute is regular milk with a few squeezes of lemon juice. It tastes just like buttermilk.

Here in California m8ost of our bait caught swordfish come at 600 to 800 feet when there rereading on Humboldt squid I prefer to harpoon them when there up sleeping as we don't use electric reels and can't mix methods of take when commercial fishing them and the big ones are a little to sporty on rod and reel for my old body and there hard to bait on the surface any Wayne caught them on top down in Mexico due to the warmer water😅
