Feature is vehicle-dependent
The main downside to immobilisers as such (compared to alarm-based security systems) is that they are not designed to have the ability to COMMUNICATE with the owner in any way. That is, they have no way of informing the owner that their vehicle is under attack, which effectively gives the thief one major advantage -- time.
Even if you have a solid immobiliser system installed to your vehicle - that features a combination of CANBUS and analogue cuts (using the former on its own is almost never a wise decision) - given enough time, even a multi-layered security system can be compromised by an experienced thief, who has come prepared. Therefore, it is crucial that you receive a timely notification if the security system detects an intrusion attempt, so you can take preventive action.
