I didn't understand the Open side angle when explaining with your student the difference between taking the angle in and out. Does it only mean that she's further away from the opponent. Or is it in or out in the way her feet navigate towards you ? Not sure if my question is clear

You're correct. If she takes the angle out, she's stepping too far to her right, further away from me. Step IN, "past" your opponent to get a proper angle to prepare to hit back. Also see our video "How to Make Angles Work" for more nuance.
