I worked as a line chef in a small award-winning Japanese restaurant, and would often watch the sushi chef at work on my breaks. This video is the training and explanation I had always needed, and I see where a few of my mistakes were when I tried to make sushi and sashimi at home. Each step is so important, from the rice, to nori, to the preparation of the fish, and you explained this patiently like a true master.

Correct. I have a "friend" that works at a Japanese restaurant, and he wanted to teach me to make sushi in exchange for my services (tattooing). So yeah, that's NEVER going to happen, because this video taught me better than anyone else could or would.

This is the only proper sushi tutorial that I've found on KZbin. I used to be a sushi chef, and sometimes I get on a kick of watching sushi tutorials just to nitpick what the teacher is doing wrong. They always leave out key techniques like wetting the knife, and checking mid-roll. They also all keep using full sheets! So much rice! Lol Good work though, from one sushi chef to another.

What I find most remarkable is that he actually uses a traditional European style chef knife which tells me he's not a poser. Japanese steel is great but you don't need it to make sushi.

I've been making my own sushi for the last 15-years or so and have watched crazy amount of videos (30+) on making sushi. Yours was by far and away the very best I've seen. My sushi always looked different than the sushi I would get in a sushi restaurant, and now I know why. The way you explained the proportions of rice to use for the various types of sushi as well as how to cut the fish correctly was particularly helpful. I thought I was doing something wrong because I had to clean my knife after every cut and now I know that's actually a good thing to do. Would like to see you do a regular maki roll besides the inside-out California roll. Anyhow, really well done. Thanks!
