I considered aging my Lambic style wild sour beer in an oak barrel but chickened out as it was my first Lambic beer. Looking forward to seeing the tasting of yours!

I used a really small barrel first from Amazon just to feel it out with the barley wine and sour porter. Might be worth it if you wanna get your feet wet. It’d be cool to split a batch and see the differences

I have one going at the moment (4 months old) but just in a big mouth bubbler. Hoping to get a barrel at some point but plastic will have to do for now. Going to do my first pull soon to blend with a saison but also bottle condition some unblended. I hope yours turns out well!

Sounds awesome! Love the name! I’m still kind of debating when I’ll do my first pull but I’m thinking maybe 9 months or so depending on how acidic it is at that point

@@HopsANDgnarly I used Bug Farm and a relatively simple grain bill so it was drinkable fast. I'll go more complex for the next top up. I recommend adding a small amount of flaked adjuncts at mash out when conversion is no longer possible so there is leftover starches so you can provide food for the bacteria and brett. This should get you more acidity as well (if desired).

Totally agree! At this size a barrel is pretty comparable but with how thick these staves are I’m hoping it lasts for well over a decade

Are you worried about pulling to much oak character from the foeder on the first go around?

Yea for sure. The holding solution I used likely removed some of that but at this scale it’ll be hard to avoid completely with the first batch. Planning to check in with it at maybe 6 months and worst case I suppose I could blend it

Next time you dump your water bottle into the kettle, try dropping a racking cane or the inner tube from an auto siphon. Allows air to enter a lot quicker and water out way faster.

@@HopsANDgnarly I actually have 2 sanke soleras one gomden sour the other sour red. I bought triclamp kits for them so I can push beer in and out of them with co2. They work well and I get to keep my wife.

@@HopsANDgnarly I would think at least 6 months. I waited a year for both of mine and have doing every 6 months. I base the amount of the pull and the replacement beer on tasting samples. I have pulled 2/3 and added back 10 gallons with increased ibu in an attempt to tame the acidity. That works to a point but maybe more frequent pulls are in order as well. They're 3 years old and have not had issues with off flavors yet beyond the beers being too acidic. It's a cool project hope it works out for you.
