Stifado - Delicious, Tangy, Warming Greek Beef Stew. How To Make Recipe

Ingredients:
500g Beef Cubed
500g Shallots / Baby Onions Whole
2 Large Carrots Grated
1 Large Onion finely diced
4 strips Smoked Bacon Finely Diced
2 Stalks Celery Very Finely Grated
3 Tbls Red Wine Vinegar
125ml Red Wine
600ml Beef Stock
1/2 Tbls Sugar
1 Tbls Tomato Puree
400g Can of Chopped Tomatoes
1 Large Bayleaf
1 Stick Cinnamon
15 Whole Black Peppercorns
Salt to Taste

Thanks for the comment. Cumin and Rosemary are not traditional for this dish and would change the dish quite dramatically as they are both quite pungent. Cumin is the principal spice in a stew we call 'Tava'.
