Good question. I actually use garlic in most Chinese stir-fries if veggie is the only ingredient because garlic is more flavorful than ginger. Garlic works for almost every veggie stir-fry to enhance the flavor. For recipes that use more delicate vegetables like this one with snow pea shoots, ginger works well because it brings up and retains the original flavor of the vegetable. Those are NOT SNOWPEA SHOOTS !! They use regular pea shoots in chinese cooking. Snowpea shoots are bitter

Yes, those that I got from the Chinese groceries tasted bitter and it is the bitterness makes the flavor unique. There may have different kind of pea shoots. To avoid confusion, I removed "snow" from my post. Thanks for your feedback. In the Chinese groceries, the vegetable is commonly labeled as 豆苗 or "pea shoots", so just keep the Chinese or English name in mind when you shop.
