This Cambodian dish is made with special shaped noodles, they are called silver needle noodles. Traditionally, they are obtained by pushing the rice dough through the holes of a sieve, the short noodles that form fall directly into boiling water.
I show you a different technique to easily make them and how to stir-fry them.

👩🍳 Ingredients for 4 people
Noodles:
250g rice flour
250g tapioca starch
¼ tsp salt
½ tbsp vegetable oil
50cl boiling water
150g garlic leaves
200g bean sprouts
2 garlic cloves
8 shrimps (optional)
4 eggs
2 tbsp light soy sauce
1 tsp dark soy sauce
2 tbsp oyster sauce
¼ tsp salt
Pinch of ground pepper
5 tbsp vegetable oil
Side sauce:
3 garlic cloves
2 garlic leaves
1 chilli (hot or sweet)
15cl water
1 tsp salt
1 tsp sugar
3 tbsp white rice vinegar
