Here's a simple recipe for Instant Pot Bhindi Masala (Okra Stir Fry). This is a quick and delicious way to cook bhindi (okra) using your Instant Pot.
Ingredients:
250g bhindi (okra), washed and chopped into 1-inch pieces
1 onion, finely chopped
1 tomato, chopped
2 green chilies, slit (optional)
1 tsp cumin seeds
1 tsp coriander powder
1/2 tsp turmeric powder
1 tsp garam masala
1/2 tsp red chili powder (adjust to taste)
1/2 tsp amchur (dry mango powder) or a splash of lemon juice
2 tbsp oil
Salt to taste
Fresh cilantro leaves for garnish
Instructions:
Prep the Instant Pot: Turn the Instant Pot to the Sauté mode and let it heat up. Add oil.
Sauté the spices: Once the oil is hot, add cumin seeds. Let them splutter for a few seconds.
Add onions: Add the chopped onions and sauté until they turn golden brown.
Add tomatoes and spices: Add the chopped tomatoes, turmeric powder, coriander powder, red chili powder, and salt. Cook for 3-4 minutes until the tomatoes soften and the spices are well combined.
Add bhindi: Now, add the chopped bhindi (okra) to the pot. Stir well to coat it with the onion-tomato mixture.
Cook: Cancel the Sauté mode and set the Instant Pot to Manual/Pressure Cook mode on Low Pressure for 2 minutes. Ensure the valve is set to sealing.
Quick release: After the cooking time is done, do a quick release of the pressure.
Final touch: Open the lid, stir in the garam masala and amchur powder (or lemon juice), and let it sit for a minute.
Garnish: Garnish with chopped cilantro leaves and serve hot.
Tips:
Make sure the bhindi is completely dry before chopping to avoid it becoming slimy.
For a crispier texture, you can sauté the bhindi for a few minutes before pressure cooking.
