This looks wonderful! Last year I made a fermented hot sauce using Habaneros - I give it to my father and brother, both of whom like really spicy condiments. To my surprise, the fermentation process really mellowed out the heat, to the point that I got to enjoy it too (I prefer medium heat). The flavor was amazing. I'm going to try this version as soon as I get back from vacation!

I made this using Serrano peppers, as I could not find any red Jalapeno or Fresno peppers. I let it ferment for about month. Came out amazing, not supper hot, a little sweet. My son loves it! Me too! I used 2lbs of Serrano's and the rest per recipe. I will be doing it again with some red peppers I can find. Thanks so much Carolyn! Just got my summer recipe Anthology, can't wait to try some of those. I have tomatoes coming in fast and hard and will be loading my roaster with tomatoes, onions, and sausage for spaghetti sauce. Get a large roaster, it is a game changer for large loads, I keep mine on the sun porch. :)

If you really want to lighten up the heat, remove the membranes which is what holds the capsaicin (heat). The seeds touch the membranes by default so can also be responsible for some heat plus bitterness as stated in the video. Thank you for the detailed steps! With plenty of serrano and jalapeno peppers in the garden, it's time to give this recipe a go!

I used fresh organic green Piri-Piri from our Asia shop in town (nothing red available). But an airtight blender would be good next time. Breathing in those aromas while blending was a special experience. The sauce is really awesome (though in my case green).

How long will this last in the fridge? 1 month? 6? 12? Are there other ways to store it to last longer? Such as freezing or dehydrating? I try to make big batches to last the year so i don't have to use store bought ingredients to make it in the winter, so most things I can.

This may have been asked but can we substitute honey for the brown suagar? I done eat sugar but I have a beekeeper in the family. I didnt know if honey will not let the fermentation take place. I have been lactofermenting for a couple years but never tried sugar in any recipe. How about sugar in the raw also? Thanks and happy gardening and fermenting

Refrigeration - Up to a few months - Keep in airtight containers, away from direct light, and ensure the fridge temperature is steady. Pantry Storage - Several weeks - Make sure it’s fully fermented and the pH is under 4.6. After that, seal it well in sterilized jars.

I've had chemical burns from both garlic(peeled a whole bag full) and peppers under my nails, though I washed my hands with neat chlorine bleach to neutralize the juice. Really rather wear those gloves!

Also nitrile gloves and peppers are a bad idea, they are porous and traps the juices, speaking from a very bad experience!
