I love cooking steak, but when it gets as thick as yours I always worry about an overdone outside and raw inside when frying, you however, managed it perfectly 🤩. I would normally sous vide very thick steaks, but even then trying to get a good crust in the pan can cause that grey well doneness to start creeping into the steak. I'm going to get one of the culinary blow torches to try next time. Great video, thank you!

Sous vide makes it much easier for sure. I need to get one of those for myself.
