Ingredients
For the Suya: Or Buy your suya
500g beef (or chicken) thinly sliced
2 tablespoons ground peanuts (or groundnut)
1 tablespoon paprika
1 tablespoon cayenne pepper (adjust to taste)
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon salt
1 tablespoon vegetable oil
Skewers (if grilling)
For the Rice:
2 cups long-grain rice
4 cups water or broth
1 onion, chopped
2 tablespoons vegetable oil
1 teaspoon salt
Optional: bell peppers, tomatoes, or other vegetables
INSTRUCTION
step 1: Prepare the Suya
1. Marinate the Meat:In a bowl, mix the ground peanuts, paprika, cayenne pepper, garlic powder, onion powder, salt, and vegetable oil. Add the sliced meat and coat it well. Let it marinate for at least 30 minutes (or overnight in the fridge for more flavor).
2. Skewer the Meat: If using skewers, thread the marinated meat onto them.
3. Grill or Cook: Grill the skewers over medium-high heat for about 10-15 minutes, turning occasionally until cooked through and slightly charred. If you don’t have a grill, you can pan-fry or bake the meat in an oven.
Step 2: Cook the Rice
1. Sauté Onions: In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
2. Add Rice: Stir in the rice and sauté for another 2-3 minutes until the rice is slightly toasted.
3. Add Liquid: Pour in the water or broth, add salt, and bring to a boil.
4. Simmer: Reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
5. Fluff the Rice: Once done, fluff the rice with a fork.
Step 3: Combine and Serve
Serve: Plate the rice and top it with the grilled suya. You can garnish with chopped vegetables like bell peppers or serve with a side of spicy sauce or salad.
