I can tell you why it's called Canadian wrestling here in Bulgaria. During the cold war an armwrestling tournament was organized between the USA and USSR. The Soviet union brought their strongest weightlifters, the US however brought actual armwrestlers. Because of that the US athletes won. One of the strongest US athletes (maybe even the captain of the US team) was in fact Canadian. To save face, the Soviet union attributed their defeat to armwrestling being a "Canadian national sport". During that time the Soviet union had no problems with Canada, they played hockey and stuff together, so they were ok with losing to a Canadian athlete "at his own sport". But why it is called that only in Bulgaria we don't know.
