Sugar 170 g
Invert syrup 50 g
Agar-agar 900 9 g
Powdered sugar 70 g
Chicken egg white 50 g or 8 g aotumiea +40 g water
If cooking with albumin, 15 minutes before cooking
mix albumin with water.
