Healthy strawberry dessert. It only has strawberries, a healthy sweetener (I used agave syrup) and aquafaba, which is the water used to boil the chickpeas.
If you haven't tried aquafaba meringue yet, you'll be surprised by its creamy, foamy texture.
You can eat it as a mousse or as ice cream.
Easy dessert to prepare.
Gluten free dessert.
Look at the options to make it low in sugar.
In this recipe, aquafaba is used: you can make your own, by boiling chickpeas, or use the one that comes in canned chickpeas.
In this recipe, only the water from the chickpeas is used. Here are a couple of ideas for using chickpeas to make cookies:

INGREDIENTS for 8 servings
200 grams (1 cup) strawberries (fresh or frozen)
200 ml (1 cup) aquafaba (the water from the chickpeas)
80 grams (4 tablespoons) of agabe syrup
INSTRUCTIONS
STRAWBERRY PURE
To make the strawberry puree, I used fresh strawberries, cut them into chunks, and cooked them for 10 minutes. Then I crushed them and strained them.
I strain them to remove the seeds, because I don't like to find seeds, but you can leave them.
You can use fresh or frozen strawberries.
MERINGUE
Strain a jar of chickpeas or two cans to keep the liquid. You can also boil them yourself and use the cooking water. This is the aquafaba.
And now just beat this liquid until it's the consistency of meringue.
Add the meringue to the strawberry puree. Mix with enveloping movements so that it stays more fluffy.
Once everything is mixed, you can put it in individual containers.
Freeze for 6 hours or more.
When you are going to eat it, take it out of the freezer 10 or 20 minutes before, so that the texture is softer.
You can put it in a large container and form ice cream balls.
If you like the foamy texture, you can consume it without freezing, like a mousse.
OPTIONS
LOW IN SUGAR / LOW IN CALORIES: Substitute the agave syrup for the same amount of your favorite sweetener
You can make your own strawberry puree by mashing strawberries. If you want a less acid taste, you can cook them for 7-8 minutes.
If you don't have strawberries, you can use another fruit.
You can also use jam.
