Hey Dave nice video! I was wondering, at 4:06, you mention the formation of a chiral salt, however the compound illustrated has no charges shown ? I get that the final compound will be ionised in biological pH but not the chiral salt you mention. Thanks in advance !

If you look at the mechanism discussed earlier, with the ammonia, you can see that not the imine, but the protonated imine is nucleophilically attacked by the cyanide. In this example the imine is prepared beforehand, thus during the reaction it is first protonated and forms the chiral imminium phosphate adduct (salt) with the catalyst which directs the stereo selectivity. Though I haven't checked the original publication, the authors may propose a different mechanism.

Many more than 20, actually. There are 20 proteinogenic amino acids (amino acids that compose proteins), but far many more non-proteinogenic amino acids.
