Street Corn Slaw Recipe

Street Corn Slaw
All things Mexican street corn but served Coleslaw style!
Ingredients
1 cup vegan mayo
1/4 cup lime juice
1 tsp chili powder
Salt and pepper
Roughly 24-32 oz of tri color coleslaw mix
1 jalapeño diced
2 rounded cups of corn, drained
1/2 cup of chopped cilantro
1/3 cup chopped green onions
1/2 cup crumbled vegan feta
For garnish (chili powder, sliced jalapeños, feta and cilantro)
Directions
Combine the first 3 ingredient's in a small/medium bowl
Season with salt and pepper
Whisk until creamy, set aside
In a large bowl add remaining ingredients
Pour in dressing
Mix well
Cover and refrigerate for 2 hours
When ready to serve remove and garnish with chili powder, jalapeños, feta and cilantro
