I always admire chefs who do one thing and do it perfectly. They spend their childhood learning it or take it up and then do only that one thing most of their life and become masters...I do everything lol..but I notice that when I do a dish many times, I can improve on it and improve on it to make it great. I was there last week and when I say the absolute best jerk chicken I have ever had! Juicy with that smoked flavor on it was amazing. Even the sauce they served with it sent the flavors over the edge! Damn I wish I had some now!
