Haha totally agree with you 😂 I measure EVERYTHING when it comes to cooking or baking anything. If I just roughly measured I bet mine would come out absolutely ruined 😂 When I was in highschool I was taught a cookie recipe that was quick and easy. I then tried to recreate it months later cause was going to have them for my birthday party. I did it so so wrong that the ingredients I used turned it into like glue instead all because I had clearly forgotten what was actually needed 😂

Hey Mia, I've been cooking gluten-free for 5 years and I've found some tips that really help. My top 2 are: 1. In a lot of baked items I increase the amount of baking powder I put in 2. I always add more liquid than any recipe calls for We often will make waffle mix, let it sit so it thickens, and then add more liquid

If you're going to bake I highly recommend buying a cup-for-cup gluten free flour blend, so much quicker and easier than mixing a bunch of different flours together yourself. And it does get easier.

I got engaged before covid and I was in the midst of planning when covid hit. We scrapped all our plans and got married at my in laws farm with just close family and friends. I honestly am happy we went that route instead. It made for a very fun time. Plus the farm animals in the pictures were cute

I always add xantham gum to my gluten free bakes.. just like a teaspoon and it makes the texture so much better. Also more liquid than normal recipes would call for, especially when using coconut flour. I also whip any eggs for a lot longer. Stress baking is my jam. I love it!!

Commenting just to add one small informational caveat: xantham gum has some harmful effects and it's in a lot of processed foods already. So whoever is interested, consider using in moderation and/or do a little research so you feel informed about what you're using. I use it rarely but try to use some more natural alternatives most of the time.

The suggestion I have found to make my gluten free baking more fluffy is to add the baking powder and soda to the flour and then mix it very well before adding wet ingredients. Coconut flour absorbs extra moisture! That's probably why your baked goods are turning out thicker than expected :) You can add a bit extra liquid to compensate for the absorption, but if you like the texture, then its all good!

I was so blessed to have my mom as my wedding planner. I was working full time and struggling with a lot, there was no way for me to devote as much time as it takes to plan a wedding. My mom made a ton of decorations (and my bouquet), took care of the venue, the bridal shower, basically everything. She was amazing, and I would have gone crazy without her. My wedding was very small and intimate, just immediate family. I did not want a big wedding, and was feeling stressed with just the few decisions that I had to make. I cannot imaging doing more than I did, and feel so fortunate that my mom was able to take care of almost everything. I feel like it was extra special too, having her so involved. Every part of my wedding had a purpose and meaning to us, there were so many little details that were just so perfect. A lot of items made by hand or thoughtfully arranged by my mom. I loved everything about it, and hope that your wedding is just as special!

Coconut flour is usually substituted with regular flour, 1/4 cup to 1 cup. So adding coconut flour is probably what makes the banana bread mixture so thick. Love your videos!

Mía, I am a gluten free baker and stress baker as well. I loved this video:-). A quick tip on getting the bread out of the pan. Place parchment paper in the pan and then spray with non stick. When the bread is done, you just lift your loaf of bread out of the pan.:-). I use Namaste flour blend for my baking and it seems to be a good universal gluten free flour. Keep making videos, my daughters and I love you!!!!

I love you baking all these GF recipes! As someone who took forever to learn GF baking, I feel you 😂 SUPER PRO TIP about coconut flour - it will dry your mix out make the final product crumbly! So use less coconut flour than other flours, and mix until JUST combined. The longer you mix coconut flour the thicker and less batter-y it gets. Second pro tip: use cream of tarter in place of baking powder! Will def make your mix extra fluffy *chefs kiss*

5:38 a tip i learned in freezing overripe bananas is to peel them first and put them in a freezer bag, mash them in the bag and freeze. saves the wanting to vomit while peeling after they are frozen and thawed
