Oh my goodness, Gogiri Makguksu restaurant is one of my favorite places!! So glad you were able to try that place out. The amazing thing they do with their noodles is that they are able to produce a delicate chewy texture despite using 100% buckwheat (which is a seed i.e. not a grain.. so NO gluten)! Most buckwheat noodle places definitely do not use 100% (or even close to 100%) buckwheat. Not only is it expensive.. but it is also very difficult to work with and master. OMG I MISS IT SO MUCH!!

I used to hate those soy bean noodles but as I get older, I have come to enjoy them more and more. Some parts of Korea eat them by putting salt in it, others season it with sugar. Just a little fun fact

Kelly yi I bought some instant soybean noodles. I’m trying soo hard to like them. I’ve tried with kimchi and it just doesn’t help. They’re so bland.
@annaly24176 жыл бұрын
I had a bowl of it at the Namdaemun market, and it was the least favorite meal I ate in Korea. It had no fragrance and no flavor from the soy milk. On top of that, the knife-cut noodles were undercooked. But I'm willing to give it another chance elsewhere when I visit South Korea again.

I yearn for 콩국수..I just love eating it with kimchi and that nutty taste of soybean and the springy yummy noodles
@reza.38894 жыл бұрын
For mw the gritty, sandy texture of soybean noodle mist be very soupy and icy cold with a decent amount of salt to truly enjoy soybean noodles. Also, really flavorful red cabbage kimchi as a side dish seems necessary for me. Cold soybean noodle is great during hot summer days but it is definitely a unique taste and texture that many will not like!
@kellybelly10044 жыл бұрын
@@Koicee8 yeah~ i think once i realized i could season them myself, it tasted amazing. When i was little, my mom would season it for us and she would make it super healthy so it had no salt but it is really good whether you season it with salt or sugar~ it has a good nutty flavor that Koreans like and the hyang (scent) is pleasant. A good food for those who have little appetite but need to eat something ^^

You did know that a lot of Koreans sprinkle coarse salt on the soybean noodles right? Salt really brings out the flavor and makes it more palatable. Also, that dish is meant to be absolutely wolfed down and swallowed in as close to one gulp as possible. Only then can you really savor the ice cold refreshing wave of frostiness that engulfs you when you eat this. If you truly eat it as it was meant to be eaten then the texture really can't bother you. Awesome vid!
