This is one of my favorite seafood recipes and it makes a great addition to a Christmas Eve seafood feast. It also makes a great appetizer for a holiday dinner - easy, but deliciously elegant! I have been making stuffed calamari for several years having learned from my mother. Some years ago I started to use a pastry bag to fill the tubes. Works like a charm.

My family always had stuffed calamari on Christmas Eve. After the antipasto, it was the main meal. It was a breadcrumb stuffing too, but we didn’t include hard boiled eggs. And we put them in a red sauce and served with long fusilli. Sadly traditions change as my grandmother passed and my mom doesn’t host Christmas Eve anymore so we don’t have it like we used to. Mom and I make it for ourselves sometimes though.
