As the stems dont have a good taste (you can eat them, but thosewont make the meal much better;)) I harvest them when the start opening. A late havest will produce long stems and take enery which can/could deliver 1-2 more flushed

I used 50/50 soy hulls, beech pellets. After 4 weeks the black was fully colonized, after 6 weeks they startet pinning. There is nothing else I did with the block just leaving it at 19°C and waiting;) I opened the bag when the first pin sets showed up
