So like the letter S, it's just one bar if you go with a round s. But if you go square or straight lines then it can be like 5 bars. Does this break the structure? Seems like several letters can be a single bar or several.

Exactly man! Every letter needs its structure to remain sound otherwise it’ll become broken, however some letters allow for bars to be added that don’t break the structure and can be used to add style.
