Loved the video. Just for my understanding, what you are saying is that if you reach 100% before normal hit you will not take damage. I assume there will still be mechanics that cause damage to a take like special attacks but you completely wipe an "auto-attack" out?

If you reached 102.4% with miss/dodge/parry but not needing block, that would theoretically be true, but it is not possible to do so with the way dodge and parry have diminishing (or linear more accurately) returns. Blocked hits will still do 69/70% of the damage of a normal hit, and you cannot come close to 102.4% without block.

Couple of questions: How does one calculate miss %? Is CTC just block% + dodge% + parry%? How do I know if I’m crit immune?

In Cata, mobs just have a 5% base miss chance and that's lowered by 0.2% for each level they are above the player. In previous expansions Defense skill also increased miss chance, but not anymore. CTC is block % + dodge% + parry% + miss% All tanks are crit immune through a talent now

Since defense as a stat doesn't exist anymore, I don't know of any way to increase boss miss beyond the base amount.

I dont have one, but the same principles all still apply. The differences would just be that dodge and parry diminish at different rates (parry DRs harder, so you get less % avoid from parry rating quicker than with dodge) and block value is a set amount, instead of a %, so the value of having full CTC varies a lot depending on what you're fighting. Also, there's Chill of the Throne from ICC (-20% dodge) and Twilight Precision from Halion (-20% dodge and -5% miss) that make full CTC unrealistic in ICC/RS outside of procs or on use effects
