I really appreciate your teaching style! It is organized, clear, and easy to understand. I can't wait to bake these cookies today because gingerbread flavor is my favorite. I've been using a Ketogenic protocol to resolve pre-diabetes and NAFL for the past 18 months. I've been successful and love how I feel using this protocol. Oh phew, I MISS gingerbread so much and I love black strap molasses but was afraid...I didn't know much I could use. I agree, I'm very sensitive to sugar now so I'm sure with only a sprinkle of the powder they're delicious.

Hi Holly! So nice to hear from you again! Blackstrap molasses is one of those tricky things that everyone has to make their own decision about whether to use or not. I love the flavor that it adds to gingerbread cookies - I am a T2D and I had three cookies (they were so good, I couldn't resist) then tested my blood sugar an hour and three hours later, and did not have a significant increase, so I figured that it was ok to use in small quantities. But everyone reacts differently, so please always trust yourself and do what is in your best interest. Thank you again for commenting! Cheers!

Hi again MX1CAN! I have confidence in you that you can make a great batch of crinkle cookies. For your first batch, I would recommend making the second version, without rolling them in the powdered sweetener - you can always sprinkle more sweetener at the end if you find you want them sweeter. Hi Aziza! Yes, you can use xanthan gum in place of glucomannan. In the written recipe, I have provided the amount for using xanthan gum as an alternative to glucomannan - use 1/2 tsp of xanthan gum instead of 1 tsp of glucomannan. Now for me, I am rolling them in the Powdered "Sugar." This looks so excellent. Looking forward to what you do next. Any chance there is a substitute for the Protein Powder you are aware of? I think I have everything here BUT that, and hope not to return to Merida until after Christmas. Thanks for these, they look amazing!!

Hi Belizeguy! First let me explain: I use protein powder to reduce the total carbs in baked goods, while still providing texture and bulk to the recipe. And next time you are in Merida, get a good quality, unflavored protein powder that doesn't have any taste. This is great for all baking. However, in the meantime, you can substitute the 4 tbsp of whey protein powder with two more tablespoons of coconut flour (coconut is much more "thirsty" than protein powder). Thanks for the speedy reply! We did have a quiet Thanksgiving. No Family but the two of us and the dogs and cat. We all are saving Travel Dollars for our Son's Wedding in March. Can I use psyllium instead of glucomannan in your cookies recipe.

Hi Dora! Although psyllium does act as a slight bulking and binding agent, I think that it will change the flavor of the cookies because it is not a direct 1 to 1 substitution. You would need much more psyllium husk. If you cannot find glucomannan, which is available in most health food stores, and also known as konjac root powder, substitute instead with xanthan gum or guar gum. These are my suggestions - I hope they help. Have a great weekend!
