One is the 'Swiss Meringue Method' and the other is 'French Meringue Method'. 😉😉😉💕 Swiss meringue(cook in double boiler) is stronger and more stable than French meringue.

@@kathyinman7376- A quick Google search says the best method for humid climates is to add 2 teaspoons of cornstarch to sugar before adding to egg whites.

Hello it's not for the temperature but for the humidity. Otherwise the sugar in them will melt and turn them into caramel. If that happens they will not turn as fluffy as they should.@@wafaakd3544

Do you serve them on the ritz cracker or do you use the crackers strictly for presentation purposes then remove it after youre done making it?? Never had meringue ritz crackers before..... not sure I would like it.... but I would try it at least once tho I guess.
