This classic nut cream cake with hazelnut biscuit, apricot jam, vanilla cream filling and an elegant decoration of nut cream, rosettes and hazelnuts is just right for autumn and winter, but also for the first days of spring! 💝 I prepared this cake for my youngest daughter Dorothea for her 14th birthday! 💝

💝 Classic nut cream cake with hazelnut biscuit and apricot 💝
Ingredients for a cake 24 cm in diameter
▶️ For my nut biscuit base (please pre-bake the day before):
6 eggs, size M, separated and at room temperature
1 pinch of salt
225 grams of sugar
1 tbsp vanilla sugar or 1 tsp vanilla paste
100 grams of flour
200 g roasted, ground hazelnuts
1 teaspoon Baking powder
2 to 4 tablespoons of lukewarm water or lukewarm milk
▶️ For the vanilla cream and the filling of the cake:
370 g apricot jam
500 ml whipping cream
2 1/2 packets of whipped cream
3 packets of vanilla sugar
▶️ For the nut cream and the decoration of the cake:
500 ml whipped cream
2 1/2 packets of whipped cream
2 packets of vanilla sugar
1 to 2 tablespoons sugar (to taste)
100 g roasted, ground nuts
16 beautiful whole roasted hazelnuts
100 to 150 g brittle or chopped, roasted hazelnuts for the edge and center of the cake
