@@Circ00mspice you should! I got a vegan who didn't like eggplant to like eggplant with this dish! Like Sui said, this dish covers up the vegetal flavor of alot of vegetables (it's still there, but they become...different). It' also extra healthy if you use meat with bones, or you can use shrimp instead for a lighter taste

My grandma makes Nilaga with corn and it's always just sweet as hell because it also has cabbages and lettuce. But it's a good way to make use of cheap Pata (hock I think it is in english) (that no one wants to eat anyway) and ironically makes it the meal one wants to eat the veggies and no one wants to eat the meat cause it sucks. But when she makes it with actual meat instead that shit goes out fast.

Filipino dishes are good for beginners because a lot of our dishes are just boiled. It's almost fool proof as long as you remember to put salt. Unlike other dishes as well, the ingredients are replaceable. For example, for an authentic sinigang, you use a leafy vegetable called "Kangkong" but you can easily change that with any leafy veggie like spinach, lettuce, cabbage, etc. For the seasoning, if you put seasoning mix, it would taste sinigang regardless of what you do. If you don't have seasoning mix, add tamarind. That's the main sour component and NEVER put vinegar. As for meat, again, replaceable. There's version where we add fish, beef, pork, etc. There's even a no-meat version but we add what we call "broth cubes" which is basically another seasoning that taste like meat. Really good for beginners. If you don't have tamarind or the seasoning mix, it wouldn't be sour. That's another dish called "Nilaga" which is like hotpot, just basically boiled meat and veggies. Again, never forget salt.

I would also add Paksiw for lazy people like me who prefers to cook once a week with a dish that can last for two weeks. But that's because I add so much vinegar to my Paksiw, then boil the heck out of it. And dang, every piece of bangus explodes in flavor.

SiniGANG!! NGL she is absolutely right, for those who haven't tried it yet this is prolly one of the easiest Philippine dish since you just dump the seasoning on the suggested amount of water then just throw in a bunch of leafy veggies that doesn't have strong taste and lil bit of onions and tomato. You can even eat it without any meat if you are tight on budget and just use stock.

Lowkey Paksiw makes me feel like a lazy witch cooking up something that will last me at least 1 week. This is why I love large pots and lotsa vinegar. Preserve that bangus to heck xD

Hey, Filipino guy here. I can confirm that sinigang is the best dish made from the Philippines and every overseas people should give it a try too. Trust me, you ain't gonna regret it. Also I'm surprised that Japan sells sinigang in specific convenience stores, but I can't really pinpoint where they sell it so it's quite the surprise, either that or I'm still living in a cave.

No need to find a restaurant, you can cook it. Some of the dishes have easy preparation, especially paksiw. I'm naturally lazy so if I want a tasty dish that can last a week(due to sourness and saltiness), I go cook Paksiw like a witch in a cauldron. We also don't mind variations to the dish. Cook with what you have available, this is how Filipino cuisine tends to be.

Suisei did a good job finding the Sinigang base there in Tokyo. I mostly I had to have people buy me the soup bases from the commissary on the US Naval base when I lived in Japan. I'm sure Tokyo has more pan-Asian grocery stores, but it's still pretty rare and not something you'll see at the big supas.

Yeah, it's quite hard to imagine the sinigang bases being available overseas... But luckily the soup base isn't so difficult since it mostly just involves getting your hands on some tamarind (tho it will be a lot more effort to make). If that isn't readily available, other alternatives include Kamias (Iba fruit), green mangoes, and god forbid...calamansi (mini limes) if you're desperate. The flavors would definitely vary so try at your own risk.

Sinigang is a dish that can be eaten in any season (dry/wet). It can be made easier, thanks to the "Sinigang Mix"; no need to go and find Kamias or Tamarind tree and grind them or making tiger-prawn base soup.

Well, for the unawares. Sinigang along with Adobo are pretty much THE national dishes of the Philippines. These are sort of the default dishes of the land. i.e. if you can't decide what to cook, you'll eventually decide on either Adobo or Sinigang. Both are also the first dishes anyone would learn how to cook after learning to cook rice

Dude rendang is awesome. Like top 10 dish of all time awesome. But sinigang and rendang are apples and oranges. One is a soup the other a braised dish. Totally different dishes. I’m from Bicol in the Philippines and we have a lot of coconut milk based dishes too so I love Indonesian food. I think our local food is closer to your food than other Philippine food.

What makes sinigang so convenient for home cooks is that it's also incredibly easy to cook. While there are a few optimizations you can make, you can simply just put every ingredient in a pot and boil it till it's done. You'll get 90% of the taste that way. If you don't care for preserving the taste of the vegetables, as Suisei here, then the veggies being overcooked is actually a positive.

Sinigang is one of the best Philippine Dish. It is so versatile it can acommodate customizations based on the cook's preference. Most common sour ingredient is usually tamarind but other sour fruits and leaves can be used instead. For protein one can use fish, shrimp, beef, pork and I've even seen some use chicken which kinda works. You can even make use of Miso creating a nice blend of Philippine and Japanese cuisine.
