Almond Oats Sukhdi
Ingredients:
1 cup almond flour
1/2 cup oats flour
1 cup ghee
3/4 cup jaggery
2 tbsp dried berries
2 tbsp gond (edible gum)
1/4 cup almonds, chopped
2 tbsp sunflower seeds
1 tbsp dried rose petals
A pinch of saffron
Method:
1. Roast Sunflower Seeds: Heat a kadai and toss the sunflower seeds until roasted. Set aside.
2. Puff Gond: In the same pan, add 2 tbsp of ghee. Once warm, add the gond and stir until it puffs up. Remove and set aside.
3. Roast Flours: In the same pan, add the remaining ghee. Once warm, add the oats flour and almond flour. Stir continuously on medium to low heat to prevent burning. Roast for about 7 to 8 minutes, until lightly browned.
4. Add Ingredients: Once roasted, add the dried berries, chopped almonds, and saffron. Mix well and turn off the heat.
5. Incorporate Jaggery and Gond: When the mixture is slightly warm, add the grated jaggery and puffed gond. Mix thoroughly until the jaggery melts and combines well.
6. Set Sukhdi: Grease a plate or tray and spread the mixture evenly. Sprinkle the reserved almond pieces, sunflower seeds, saffron, and rose petals on top. Press down lightly.
7. Cut and Cool: While still hot, make cut marks in the mixture. Let it cool completely to set, then cut into pieces and store in an airtight container.
