Summer Black Bean & Corn Salad!

It’s summer and what a great cold salad this is for a hot day! Easy to make, and throw it together a day ahead if you like!

Recipe:
3 bell peppers assorted colors diced
1/2 cup onion diced
1 1/2 cups fresh corn or 1 can of corn drained
one can of black beans rinsed and drained
2 tablespoons of cilantro chopped
1/4 cup olive oil
1 Tsp lime juice
5 tablespoons of red wine vinegar
1 teaspoon chopped garlic
salt and pepper to taste 
Mix and enjoy!

Thank you!! Got it from a TJ Maxx a few years back. If you look over Rich’s left shoulder at the end of the video in the China cabinet you will see I have a big serving plate that matches it. I absolutely love sunflowers. Rich has actually banned me from buying anything else with sunflowers for a while. L O L.
