Thanks for video. I start the drying process in the warming drawer overnight and then place my quartered figs on a plastic three-tiered vegetable rack lined with paper towel, I cover with netting and place outside in the sun - I dry them for 2 days and if not completely dry I will put back in warming drawer. Works well for me.

thank you for this video, this economy right now is preventing us from buying food, we been going to food bank, they give us alot of plums and grapes lately and necterines, we give out most of it to our neighbors and others who need it too as they literally give us crates/boxes full of them, was just thinking of this today why not dry them in this hot texas heat, but my mom shut me down with the flies reply, but yep just use a skeeter net! ill be making this soon thanks for the video.

If you sundry it for more than one day, do you put the fruit slices in the fridge at night to prevent spoiling and take it out the next day to sundry it again?

I have a very tiny fridge, so I just bring the fruit drier inside at night, but don't refrigerate the fruit. And usually things like mangoes are very close to completely dried here after one day anyway. But if you had space in your fridge and it is taking a long time for your fruit to dry, you certainly could do that.

I have not tried drying coconut in the sun, but your experience sounds similar to how my dried papaya strips turned out smelling like dirty socks!

I think it is possible as long as you make sure the fruits are dried very thoroughly. Before selling, you can dry some and try keeping it for some months to see how long it will stay good (then you can put an "expires by..." date on the package). I would also recommend using the citric acid treatment to prevent discoloration of the fruit so it looks nice for sale.

It is not necessary to treat fruit with citric acid before drying, but if your fruit is turning black, then using citric acid before drying will help the fruit keep its normal color!

Sorry, Sharrice, I was not the one to build this so I don't have specifics on how to do it. But it is basically just a simple wooden frame with wire mesh nailed to it. I tied rope to the corners so I could cover it with the mosquito net and hang it. It is true that sun dried fruits lose more of their vitamin A and C from open sun drying, but much of those vitamins will still be lost in other drying methods.

Very nice. Why are use citric acid & how much quantity of fruit for soak in 500 ml water. Which is the best method between sundry & dehydration method.

The citric acid helps the fruit keep its color and texture when it is dried. I don't have a specific amount of fruit in the 500mL of water - just put as much fruit in as can be covered by the water. If you have a dehydrator, it will be faster than drying in the sun and you won't have to worry about clouds or rain. But sun-drying is cheaper than using a dehydrator.

I'm here for the fruit rack. How did you build the fruit rack and is it hanging from the ceiling? Also, how is the netting attached at the top?

It is just a wooden frame with a wire mesh nailed to the bottom of it. Then, I tied twine to each corner and tied their ends together - It can be hung from a hook or from a clothesline using that twine. The mosquito net is just thrown over the whole thing. I tied the middle of the net around the knot in the twine at the top. I hope that description helps you understand!

Good question. In terms of vegetables, I have only used this drier for thinly sliced okra and tomatoes (if you count tomatoes as vegetables). However, here in Uganda, people always thinly slice sweet potatoes and dry them on a tarp in the sun to store for eating months later. So, I imagine it would be possible, but they would most likely take longer than fruits and might get discolored by the sunshine.

I have never tried drying apples in the sun, since apples are expensive where I live. But I would imagine that if you sliced the apples thinly enough and had enough heat and sunshine, it would work. Apples usually get discolored when they're left out, so I would dip them in lemon juice before putting them out to dry.

Personally, I have not tried it, but there are various ways to add sugar. What will happen if it’s without the mesh? Is there a chance of the food spoiling? Because all photos of the old days are without a mesh.

If you don't use mesh, then you have a risk of flies and other insects getting on the food and contaminating it. It will dry just fine without mesh, but it will be less sanitary

It depends on how well you dry them - if there is still moisture, they won't last very long (it is difficult to dry the bananas or pineapple enough using this method). But I've kept dried mangoes for three months without them spoiling. They might have lasted longer, but I ate them by then! Dried orange slices can also last for months. Keep them in a well sealed container in a dry place.

How hot does it have to be outside? How do you store the dried food after it's done?

For this method, I'd guess that it should be fairly hot outside. It is usually probably around 75F when I put fruit out in the morning and gets up to 80-95 in the middle of the day. When it is dry, I store it in a ziploc bag or in a plastic container with a good lid.

Good question. I would say that if you are living in a fairly dry place, you can keep them in a sealed jar or plastic bag at room temperature. But if it is very hot and humid, then it would be better to keep them in the fridge. The place where I live is quite dry, so as long as the fruit is dried well, I can keep it at room temperature for at least a month (I've eaten all of it by that time, so I don't know if it would stay longer)

I have never tried sun drying strawberries, since they are not very available in Uganda, but I would guess that it is possible. Probably it would help to cut them in half instead of drying them whole. You should try and let me know if it works!

I have sun dried orange slices before - I just cut them thinly and then dried the same way as the other fruits. I think cooking them in sugar syrup first would be a matter of taste - if you want them to be sweeter rather than the natural taste.
