When you see the success of such dishes at fast food outlets, it may seem intimidating to try to make them at home, for fear that they will not turn out the same. But the good news is that they are very easy to make and guaranteed to be much better and healthier than store-bought ones.

📌 Ingredients for 10 schnitzels
approx. 600 g chicken breast (muscles)
for the marinade:
1 large onion
2 cloves of garlic
50 ml olive oil
1 teaspoon paprika
½ tsp chilli flakes (optional)
salt and pepper
for the crispy crust:
2 eggs
3-4 tablespoons of flour
200 g corn flakes (without sugar)
1 tablespoon breadcrumbs
for frying:
approx. 500 ml oil for frying

🔪 Preparation
Place all the ingredients on the marinade list in an electric food processor or food processor bowl. Blend until you get a paste.
If necessary, cut the chicken breast into bite-size pieces and place in a bag. Pour the marinade into the bag and mix well so that it covers all the strips of meat. Refrigerate the bag for at least 3 hours or overnight.
When you want to cook the schnitzels, leave the meat on the counter until it reaches room temperature. Do not remove the marinade, you will cook it with all the onion paste left on the meat strips.
Put the cornflakes in a bag and crush them by running the rolling pin over the bag a few times. They should not be turned into a powder, but coarsely chopped.
Prepare 3 wide plates: one with flour, one in which you put the beaten eggs with a pinch of salt and one with the crushed corn flakes mixed with the breadcrumbs. Roll the pieces of meat first in flour, then in beaten egg and finally in cornflakes. Do this with all the meat.
Heat the oil in a deep pan. Fry the schnitzels as much as they fit loosely in the pan, without overlapping them. Fry on medium-high heat for 3 minutes on one side, then flip and fry for another 2-3 minutes on the other side.
Remove the schnitzels to paper towels to absorb excess oil. They are served hot or cold.
