Bit of a stretch maybe, but I think the reason the water was quicksand is simply due to a mission you gotta complete in mario sunshine. If you hit a wall while riding one of the bloopers, it just pretty much kills your life, and you have to restart from the beginning. Obviously there's no bloopers to ride in sm64ds, so they made due with the green shell. What do y'all think?

It's a cool hack but the fact that the first star isn't very clear is poor design. Like the first star in the og game in Bob omb battlefield was a clear objective, allowed you to learn the fundamental mechanics of the game but whilst also giving you the opportunity to pursue some other stars too without being too obtuse or intrusive about it.
