You have to keep the Red Yoshi egg in the air long enough for another Yoshi to die offscreen. If there are less then two Yoshis still alive, Red Yoshi can spawn.

I think I know how the final catch game works. There are some Yoshis spawned in other areas in the level, so when the egg lands, it will hatch and nothing comes out. But when the egg is on its final bounce, a Yoshi is killed and the egg is able to spawn a Yoshi since the maximum limit isn't exceeded anymore.

With a single player, only 2 yoshis can be loaded at once. When there are 2 yoshis loaded all other eggs hatch nothing. You can also put keys in eggs.

If there are already 2 yoshis loaded all subsequent eggs will hatch nothing. There are 2 yoshis off-screen that prevent eggs from hatching more yoshis.
